Ingredients
- 1 pound summer squash (ends trimmed, sliced into “ribbons”)
- 1/4 cup thinly sliced red onion
- 1/3 cup toasted pecans (crumbled)
- 1/3 cup chevre (goat cheese, crumbled)
- 1/4 cup Mustard Vinaigrette
Instructions
- Add prepared squash, onion, pecans and goat cheese to a large bowl, pour dressing over top and toss well.
Notes
We recommend organic ingredients whenever possible.
If you are trying to avoid GMO’s definitely choose organic squash as varieties not labeled organic may be genetically-modified.
For this recipe I used two zucchini and one yellow squash, but most varieties (and any combination) of summer squash would work.
I used the straight blade on my Paderno Spiralizer to quickly turn the squash into ribbons. If you don’t have a Spiralizer, a vegetable peeler or mandoline slicer would work great too.
