Ingredients
Salad:
- 3 cups broccoli florets (about 1 large head)
- 2 cups apple (diced (about 1 large apple))
- 1/2 cup onion (diced (about 1/2 medium onion))
- 2–3 tablespoons lemon juice (about 1 lemon)
- 1 cup carrot (shredded (about 1 carrot))
Dressing:
- 1/2 cup greek yogurt
- 2 tablespoons mayonaise
- salt and pepper to taste
Optional Mix-Ins:
- 1/2 cup red seedless grapes
- 1/4 cup dried cherries or raisins
- 1/4 cup roasted sunflower seeds (pine nuts, or walnuts)
Instructions
- In a large bowl toss the salad ingredients together and any of the optional mix-ins.
- Make the salad dressing. Pour over the salad and mix.
- Season to taste.
Notes
We recommend organic ingredients if possible.
Although you can use any kind of onion, I prefer using a sweeter variety like Vidalia or Walla Walla. And if you want an even more subtle onion flavor, sauté the onions for a few minutes in olive oil before adding.
Feel free to adjust the proportion of mayo based on your tastes. Or if you prefer, eliminate the mayo altogether and substitute more greek yogurt or sour cream for a lighter flavor.
