- 4–5 cups roasted vegetables
- Red Wine Vinaigrette or your favorite italian dressing to taste
- 2 cups arugula (spinach, or favorite greens)
- 8 ounces cooked whole grain pasta or pasta of choice
Instructions
- Prepare a batch of roasted vegetables.
- Prepare pasta according to its directions. Drain and set aside.
- In a large bowl toss pasta, roasted vegetables, greens, and dressing to taste. Serve and enjoy!
