Description
This is a simple, easy recipe to get your kids involved in making vegetables.
Ingredients
- 1 pound green beans or haricot vert (trimmed and rinsed)
- 2 tablespoons butter
- 1 1/2 tablespoons lemon juice (about a half of one lemon)
- Salt and pepper to taste
Optional Garnish:
- Sliced almonds or pine nuts (sautéed lightly in olive oil until lightly brown)
- 2 shallots (thinly sliced and sautéed in olive oil. When shallots are tender and translucent serve on top of green beans and add 1/2 cup of diced tomatoes.)
- 1 teaspoon lemon zest
- 1/2 teaspoon crushed red pepper
Instructions
- Cook beans in 4-quart saucepan of boiling water for about 5 minutes. Beans should be bright green, tender, but still have a crunch when done!
- Drain water.
- Add butter, lemon juice, and season to taste.
- Garnish if desired.
Notes
We recommend using organic ingredients when possible.
You may also choose to steam your green beans. If so, place the green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 8-10 minutes.
