Description

This is a simple, easy recipe to get your kids involved in making vegetables.


Ingredients

Scale
  • 1 pound green beans or haricot vert (trimmed and rinsed)
  • 2 tablespoons butter
  • 1 1/2 tablespoons lemon juice (about a half of one lemon)
  • Salt and pepper to taste

Optional Garnish:

  • Sliced almonds or pine nuts (sautéed lightly in olive oil until lightly brown)
  • 2 shallots (thinly sliced and sautéed in olive oil. When shallots are tender and translucent serve on top of green beans and add 1/2 cup of diced tomatoes.)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon crushed red pepper

Instructions

  1. Cook beans in 4-quart saucepan of boiling water for about 5 minutes. Beans should be bright green, tender, but still have a crunch when done!
  2. Drain water.
  3. Add butter, lemon juice, and season to taste.
  4. Garnish if desired.

Notes

We recommend using organic ingredients when possible.

You may also choose to steam your green beans. If so, place the green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 8-10 minutes.
