  • Author: Bruce Bradley
  • Total Time: 20 minutes
  • Yield: 6 -8 servings 1x

Ingredients

Scale
  • 810 cups assorted lettuce greens (about 1 1/22 heads, washed, dried, and chopped)

Toppings:

  • 1 avocado (diced)
  • 2 hard-boiled eggs (diced)
  • 1/21 cup cheese
  • 2 cups tomatoes (diced or red peppers)
  • 1 cup cooked chicken (diced (1 chicken breast))
  • 1/2 pound cooked bacon or ham (chopped)
  • 1/21 cup fruit
  • 1 lemon (juiced)
  • Homemade Red Wine Vinaigrette

Instructions

  1. Wash, dry, and chop lettuce greens.
  2. Prepare and chop other ingredients. Sprinkle some lemon juice on avocado and any fruit that will brown to keep it looking nice and fresh!
  3. Arrange lettuce greens on a large platter.
  4. Down the center of the lettuce-covered platter arrange a strip of diced tomatoes. Add a strip of each of your ingredients, doing your best to create an appealing variety of colors.
  5. Get out some salad tongs and serve with a homemade red wine vinaigrette or dressing of your choice.
  6. Enjoy!

Notes

We recommend organic ingredients when possible.

Here are some delicious ingredient options for the above recipe:
Lettuce greens—romaine, arugula, watercress, endive, escarole
Cheese—blue cheese, white cheddar, goat cheese
Fruit—apple, pear, strawberries, raspberries, blueberries, peaches, mangoes, pitted dark sweet cherries
Cooked Meat—diced chicken breast, turkey breast, ham, bacon

If you’re looking for vegetarian options, chickpeas, white beans, kidney beans, pistachios, almonds, or sunflower seeds can be great non-traditional ways to make a Cobb Salad vegetarian style!
